In The Sun is our big-fruit filter coffee — the one built for colour, sweetness, and that unmistakable natural-process glow. This edition comes from Ismael Hassen Aredo and Kayon Mountain Farm in Shakiso, Guji, Oromia, Ethiopia, and it lands exactly where In The Sun should: bright, juicy, fruit-soaked, and full of momentum.
Kayon Mountain Farm crosses two villages, Taro and Sewaana, where residents traditionally worked in a local mine before Ismael and the families behind the farm began building a different path through coffee. Since the farm’s founding in 2012, that work has created permanent positions, seasonal jobs, stronger worker support, free transportation, financial support for local schools, and wages above what the mine had offered. This is coffee as livelihood, infrastructure, and possibility — all rooted in place.
The cup is vibrant and expressive, with blueberry, lemon curd, and strawberry shortcake leading the way. The acidity is bright, almost like fresh orange juice, while the berry notes come through with intensity: blackberry, strawberry, plum, and peach moving together in a sweet, sunlit finish. It is lush, lively, and generous — the kind of coffee that makes the whole table lean in.

PROCESSING METHOD
Natural
In a natural process, the coffee cherry is dried with the fruit still surrounding the seed. Instead of removing the fruit before fermentation and drying, the whole cherry dries slowly, allowing fruit sugars and aromatic compounds to influence the final cup more directly.
For In The Sun, the natural process helps build the coffee’s big fruit character, rounder body, and layered sweetness. The profile stays bright, but the fruit has more depth and saturation than a cleaner washed profile might show.
In the cup, this means blueberry, lemon curd, strawberry shortcake, blackberry, plum, peach, and a bright citrus lift around the edges — juicy, generous, and full of sunshine.
