ORIGIN STORY: This coffee is a Mountain Water Processed selection from Alex Keller, a prominent figure in the coffee industry who serves as the VP of Anacafe while also managing his family's farm. The decaffeination method employed is an indirect technique similar to Swiss Water, which preserves the coffee's clarity and vibrancy without the use of chemicals. It utilizes a green extract and water to eliminate caffeine from the beans, ensuring that the distinctive flavour profiles remain unaltered.
FLAVOUR: Decaffeinated coffee often receives criticism due to its history of subpar green coffee and overly aggressive roasting techniques. Nevertheless, when you begin with high-quality coffee and roast it with decaffeination in mind, you can achieve a remarkable cup like this one, showcasing delightful hints of sweet mango and chocolate.
