BEANOGRAPHY
Possibly Maybe is the wild card — the coffee that refuses to behave politely in a lineup. This edition comes from Karol Ortega in Huila, Colombia, and it is exactly the kind of cup that earns the name: unexpected, expressive, and beautifully hard to pin down.
Karol is a young member of the Monkaaba collective project, a network of smallholders working to build a more transparent and stable route for exceptional coffees. Many producers in the group share the same challenge: growing remarkable coffee while still fighting for dependable markets, long-term guarantees, and real respect for their work. Through Monkaaba and Semilla, this lot is part of a more intentional model built on feedback, autonomy, and collective support.
The coffee itself is Sidra, and it shows. The cup opens with floral spice — cinnamon hearts, orange blossom, and sweet aromatic heat — before moving into tropical fruit notes of mango, pineapple, and papaya. The finish lands with citrus brightness and a deeper, cookie-like sweetness: key lime pie, fig newton, and molasses around the edges. It is playful, vivid, and a little bit mischievous. Exactly as Possibly Maybe should be.

PROCESSING METHOD
Fully Washed
In a fully washed process, the coffee cherry is depulped so the outer fruit is removed before fermentation and washing. This reduces the influence of extended fruit contact and allows the coffee’s cultivar character, growing conditions, and processing clarity to come forward more directly.
For Possibly Maybe, the washed process helps keep this Sidra lot bright, articulate, and expressive. The structure stays clean while the cup still carries vivid fruit, lifted florals, and sweet spice.
In the cup, this means cinnamon hearts, mango, key lime pie, orange blossom, pineapple, papaya, fig newton, and molasses around the edges — colourful, precise, and full of personality.
