BEANOGRAPHY
Last Splash is a coffee of light and lift — the kind of washed filter that feels almost architectural in the cup. Nothing is heavy. Nothing is blurred. It opens with a floral hush, brightens into citrus, and then softens into a sweetness that lingers like fruit set in syrup.
Maria Estela farms in San Ignacio, Cajamarca, within the El Morito producer community, where shared investment has helped strengthen infrastructure, processing, and consistency across neighbouring farms. But behind the structure is a family story as well. Maria runs her farm while raising and supporting her children, with education and continuity at the heart of the work. Two of her children are pursuing careers in medicine, while her son Antony is preparing to specialize in post-harvest processing so the family can continue refining what they produce at origin.
That sense of continuation lives inside the cup. Last Splash feels composed, like a coffee made by someone working not only for a harvest, but for a future. Jasmine arrives first, then blood-orange brightness, then a softer poached-pear finish that rounds everything into calm. It is a graceful coffee — bright, yes, but never sharp; elegant, but never fragile.

PROCESSING METHOD
Fully Washed
In the fully washed process, the skin and pulp are removed before the coffee is fermented, washed, and dried, creating a more controlled post-harvest environment around the seed. This changes fermentation behaviour, moisture movement, and metabolite development in ways that often favour clarity and structural precision. During roasting, those preserved or modified precursors are transformed through Maillard chemistry and related thermal reactions, helping generate the volatile and non-volatile compounds that shape the cup’s acidity, transparency, and overall balance.
