BEANOGRAPHY

Decaffeinated proves that a remarkable coffee experience doesn't need to revolve around caffeine.

This edition introduces a new chapter for Phoenix Coffee's decaffeinated offering, bringing together the work of the FEDECOS cooperative network in Mexico's Soconusco region of Chiapas.

Carefully sourced and processed using the Mountain Water Decaffeination Process, this coffee celebrates the flavour possibilities of specialty coffee without making caffeine the centre of the experience.

FEDECOS represents a network of ten coffee cooperatives working across seven municipalities in southern Mexico.

According to our roasting partner's offer sheet, the federation brings together approximately 708 smallholder coffee producers, creating opportunities for collective organization and participation in coffee markets.

The coffee itself is a combination of Bourbon, Typica, and Mundo Novo varieties, grown at elevations ranging from approximately 1,000 to 1,800 metres above sea level.

Its flavour profile is wonderfully distinctive.

Raspberry Jam introduces the suggestion of concentrated berry sweetness, reminiscent of ripe raspberries gently cooked into preserves.

Lime Zest brings a contrasting citrus character, evoking the aromatic brightness of freshly grated lime peel.

Cashew Butter completes the experience with a rich, creamy, roasted-nut reference that adds a comforting dimension to the tasting profile.

Together, these three notes create an intriguing combination of fruit, citrus, and nutty richness.

It's a flavour profile that challenges the idea that decaffeinated coffee must be ordinary, predictable, or lacking in character.

Whether enjoyed as espresso, paired with milk, or carefully prepared as filter coffee, Decaffeinated offers an opportunity to explore specialty coffee on your own terms.

No compromise in curiosity. No compromise in craftsmanship.

Just thoughtfully sourced coffee with a story worth sharing.

ORIGIN

SOCONUSCO, CHIAPAS — MEXICO

The Soconusco region lies in southern Chiapas, near Mexico's border with Guatemala.

Coffee cultivation has long been an important part of the region's agricultural identity, with smallholder producers contributing to its coffee-growing traditions.

The area's varied elevations and growing environments support the cultivation of different coffee varieties.

This edition of Phoenix Coffee's Decaffeinated offering originates from the FEDECOS cooperative network, representing coffee-growing communities across seven municipalities.

According to the supplier's information, the coffee is grown at elevations ranging from approximately 1,000 to 1,800 metres above sea level.

The lot includes three established Arabica varieties: Bourbon, Typica, and Mundo Novo.

Each variety contributes to the agricultural diversity represented within this offering.

Rather than attributing the coffee to a single estate, this edition celebrates the collective work of the smallholder producers participating in FEDECOS.

For Phoenix Coffee, understanding where a coffee comes from also means recognizing the people and organizations responsible for bringing it to market.

PROCESSING METHOD

WASHED & MOUNTAIN WATER DECAFFEINATED

This offering undergoes two distinct preparation stages: washed coffee processing and decaffeination using the Mountain Water Process.

WASHED PROCESSING

Washed processing involves removing the outer fruit of the coffee cherry and separating the remaining mucilage from the seed before drying.

The method is commonly associated with coffees that emphasize clarity and definition in their flavour profiles.

The precise fermentation, washing, and drying procedures can vary between producers and processing facilities.

For this FEDECOS offering, the supplier identifies the coffee as washed but does not specify the individual fermentation or drying protocols.

MOUNTAIN WATER DECAFFEINATION

Following its initial coffee processing, the coffee undergoes decaffeination using the Mountain Water Process.

This is a water-based decaffeination method developed to remove caffeine while preserving as much of the coffee's desirable flavour character as possible.

The process uses water and a coffee-derived extract to help selectively remove caffeine from the green coffee.

Unlike sugarcane ethyl acetate decaffeination, the Mountain Water Process relies on a water-based extraction approach.

Although decaffeination necessarily changes aspects of the coffee's chemical composition, careful processing aims to preserve the characteristics that make the original coffee enjoyable.

For this offering, the supplier identifies three principal tasting notes:

Raspberry Jam, Lime Zest, and Cashew Butter.

These notes offer a distinctive combination of berry sweetness, citrus character, and comforting roasted-nut richness.

The result is a decaffeinated specialty coffee created for people who want to continue exploring flavour without the usual caffeine content of regular coffee.

PRODUCER SPOTLIGHT

FEDECOS

COOPERATIVE FEDERATION | CHIAPAS, MEXICO

Behind this edition of Decaffeinated is FEDECOS, a federation of coffee cooperatives representing smallholder producers in Mexico's Soconusco region.

According to Quietly Coffee's offer sheet, FEDECOS brings together ten member cooperatives operating across seven municipalities.

The federation represents approximately 708 smallholder coffee producers.

Cooperative organizations can play an important role in coffee-producing communities by helping individual farmers coordinate activities, participate in shared initiatives, and engage with broader markets.

For smallholder producers, these collective structures can provide opportunities that may be difficult to pursue individually.

FEDECOS represents the combined agricultural work of participating coffee-growing families rather than the production of a single named farm.

This distinction matters.

Every coffee has a story, but not every story belongs to one individual producer.

Sometimes, the most meaningful contribution comes from the collective efforts of many people working toward a shared goal.

The coffee selected for this edition combines Bourbon, Typica, and Mundo Novo varieties and undergoes washed processing before Mountain Water decaffeination.

Its flavour profile of Raspberry Jam, Lime Zest, and Cashew Butter offers a distinctive expression of what decaffeinated specialty coffee can bring to the table.

For Phoenix Coffee, this offering is an opportunity to celebrate both the coffee and the communities whose agricultural work makes it possible.

Thoughtfully sourced. Carefully prepared. Decaffeinated without surrendering the pleasure of discovery.
