BEANOGRAPHY

In The Sun is the fruit-forward side of the Phoenix lineup — bright, juicy, full-bodied, and built for people who want a cup with colour.

This lot comes from the Abateraninkunga ba Sholi Cooperative in Rwanda. The cooperative began in 2008 with 30 women working collectively around shared values of mutual assistance. Today, Sholi brings together hundreds of farmers who deliver fresh coffee cherries to the cooperative washing station, building a cup that reflects both community and careful processing.

In the cup, In The Sun is generous and tropical. It opens with the sweetness of blueberry bar and ripe pineapple, then moves into golden Ataulfo mango, guava, bright lime, and rich cooked sugars. It is naturally processed, fruit-heavy, and full of body — sunshine energy in whole bean form.

PROCESSING METHOD

Natural

In a natural process, the coffee cherry is dried with the fruit still surrounding the seed. This extended contact between fruit and seed can influence fermentation behaviour, drying dynamics, aromatic development, and perceived sweetness in the finished cup.

For In The Sun, that natural process helps support a fuller body and a more fruit-forward profile. The cup expresses vivid tropical sweetness, cooked-sugar depth, and ripe fruit notes like blueberry bar, pineapple, Ataulfo mango, guava, and bright lime.

Natural coffees can feel heavier, sweeter, and more rounded than washed coffees. In this case, the result is a cup with big fruit, big body, and a bright tropical lift.

Abateraninkunga ba Sholi Cooperative

Sholi Cooperative is a Rwandan producer cooperative in the Muhanga District. It began in 2008 with 30 women working together around shared values of mutual assistance. The name Abateraninkunga translates to mutual assistance, reflecting the cooperative’s founding spirit and community-based structure.

Today, Sholi is made up of hundreds of farmers who deliver fresh cherries to the cooperative washing station. Their work has earned national recognition, including Rwanda’s Cup of Excellence in 2015.
