BEANOGRAPHY
In The Sun is our celebration of naturally processed specialty coffee — a bright, expressive offering that brings the vibrant fruit character of Ethiopia's Guji region into focus.
This edition comes from Ismael Hassen Aredo and Kayon Mountain Farm, located in the Shakiso district of Oromia, Ethiopia.
Established in 2012, Kayon Mountain Farm has become recognized for its specialty coffee production and its efforts to support workers and neighbouring communities.
Situated at elevations ranging from approximately 1,900 to 2,200 metres above sea level, the farm cultivates local Ethiopian landrace coffee varieties.
For this edition of In The Sun, the coffee undergoes natural processing, in which harvested coffee cherries are dried with the fruit remaining around the seeds.
The result is a coffee selected for a distinctive trio of tasting notes.
Blueberry introduces the familiar character of ripe berries, with a suggestion of concentrated fruit sweetness.
Lemon Curd evokes the rich, tangy citrus character of a classic lemon dessert.
Strawberry Shortcake completes the profile with an inviting combination of strawberry, cake, and cream-inspired sweetness.
Together, these notes create an expressive flavour combination that moves between berries, citrus, and familiar dessert flavours.
In The Sun is especially well suited to those who enjoy exploring the fruit-forward possibilities of naturally processed specialty coffee.
Whether prepared as a carefully measured pour-over, brewed in a French press, or enjoyed over ice, this offering invites you to discover the character of a remarkable Ethiopian coffee.
A celebration of thoughtful cultivation, producer relationships, and the pleasures of discovering something extraordinary in an everyday cup.
ORIGIN
SHAKISO, GUJI, OROMIA — ETHIOPIA
Ethiopia holds a remarkable place in coffee history as the birthplace of Arabica coffee and a centre of extraordinary genetic diversity.
Within Ethiopia, the Guji region has become internationally recognized for its specialty coffee production and distinctive growing environments.
Located in the Oromia region of southern Ethiopia, Guji encompasses varied elevations, agricultural landscapes, and communities with longstanding relationships to coffee cultivation.
This edition of In The Sun originates from Kayon Mountain Farm, situated in the Shakiso district.
The farm extends across the communities of Taro and Sewana and operates at elevations of approximately 1,900 to 2,200 metres above sea level.
Its coffee production includes local Ethiopian landrace varieties, reflecting part of the remarkable agricultural diversity found in the country's coffee-growing regions.
Kayon Mountain Farm is operated by Ismael Hassen Aredo and his family, with a focus on specialty coffee cultivation and processing.
For Phoenix Coffee, the importance of origin extends beyond geography.
Understanding where coffee grows also means recognizing the people, communities, and agricultural knowledge that make each harvest possible.
In The Sun offers an opportunity to experience a naturally processed coffee from one of Ethiopia's celebrated specialty coffee regions.
PROCESSING METHOD
NATURAL
Natural processing is one of the oldest methods of preparing coffee after harvest.
Unlike washed processing, in which the outer fruit is removed before drying, natural processing allows the coffee cherry to dry with its fruit surrounding the seeds.
Once the cherries have reached the appropriate moisture level, the dried fruit and surrounding layers are removed during milling.
The extended contact between the seed and the surrounding fruit can influence the development of aromas and flavours during drying.
Naturally processed coffees are often associated with pronounced fruit character and sweetness, although the precise result depends on the coffee variety, growing conditions, harvesting, processing, and roasting.
For this edition of In The Sun, our roasting partner identifies the coffee from Kayon Mountain Farm as naturally processed.
Its principal tasting notes are:
Blueberry — ripe berry character.
Lemon Curd — rich, tangy citrus character.
Strawberry Shortcake — strawberry and dessert-inspired sweetness.
Together, these notes provide an accessible introduction to the distinctive flavour possibilities of naturally processed Ethiopian specialty coffee.
