BEANOGRAPHY
This edition of Allie & Lennie comes from the Yamamoto family at Fazenda Agropesp in Brazil's Cerrado Mineiro region.
The coffee is Paraíso MG2, grown at approximately 1250 metres and processed using the pulped-natural method. Its stated tasting profile is peanut butter, Bosc pear, and Skor.
Those notes bring together three distinct references: the familiar nuttiness of peanut butter, the fruit character of Bosc pear, and the chocolate-and-toffee confection represented by Skor.
Allie & Lennie remains the Phoenix name attached to the offering, but the story of this edition belongs first to the Yamamoto family, Fazenda Agropesp, and the Brazilian coffee behind it.

ORIGIN
Minas Gerais, Cerrado Mineiro, Rio Paranaíba — Brazil
Fazenda Agropesp is located in the Cerrado Mineiro coffee-producing region of Minas Gerais.
This Paraíso MG2 lot was grown at approximately 1250 metres.
The regional identity, producers, cultivar, elevation, and processing method are retained individually in the product information so the coffee can be understood as an agricultural product with a specific provenance—not simply through its Phoenix name.

PROCESSING METHOD
Pulped Natural
Pulped natural is a coffee-processing method in which the skin of the harvested coffee cherry is mechanically removed while some of the fruit's mucilage remains around the coffee seed during drying.
This distinguishes it from a fully washed process, where more of that fruit material is removed before drying, and from a traditional natural process, where the coffee cherry remains substantially intact around the seed during drying.
For this lot, the documented processing method is Pulped Natural.

PRODUCER SPOTLIGHT
Ernesto & Cassio Yamamoto
Fazenda Agropesp
Ernesto and Cassio Yamamoto are the producers behind this lot from Fazenda Agropesp.
In Brazil, fazenda is the Portuguese term commonly used for a farm or agricultural estate. We retain the term here because the language used within coffee-producing countries is part of understanding the coffee itself.
The source material also connects the Yamamoto family's work with Aequitas and identifies Fazenda Agropesp as the agricultural home of this Paraíso MG2 coffee.
