BEANOGRAPHY

Sugar Mountain is the wild, technicolour side of the Phoenix lineup — the coffee that arrives with bright fruit, playful sweetness, and just enough mischief to make the cup feel alive.

This edition comes from Angel Ortega in San Agustín, Huila, Colombia, and it carries the energy of a thoughtful experimental process. Angel works with Pink Bourbon cherries from Miramar and uses a passion fruit co-ferment, adding actual passion fruit during fermentation before the coffee is processed. This approach helps shape the coffee’s tropical fruit expression while keeping the cup clean, structured, and enjoyable.

In the cup, Sugar Mountain opens with passion fruit and a bright citrus lift that reads like mandarin orange. As it settles, the sweetness softens into marshmallow, red apple, and a light chocolate finish. It is tropical, funky, experimental, and fun — exactly what Sugar Mountain is meant to be.

PROCESSING METHOD

Passion Fruit Co-Ferment

Co-fermentation is an experimental coffee-processing method where another ingredient is introduced during fermentation to influence the coffee’s aromatic development, perceived sweetness, and fruit expression.

For this Sugar Mountain lot, Angel Ortega ferments Pink Bourbon coffee cherries with actual passion fruit before the coffee is processed. This is different from adding syrups, flavour oils, or artificial flavouring after roasting. The passion fruit is part of the fermentation environment, not a flavour shot added to finished coffee.

During fermentation, naturally occurring yeasts, bacteria, sugars, acids, and fruit compounds interact around the coffee cherry. This can shape how the coffee expresses itself in the cup, helping create more vivid tropical fruit notes, citrus brightness, and soft candy-like sweetness.

The result is playful and expressive, but still recognizably coffee: passion fruit, mandarin orange, marshmallow, red apple, and a light chocolate finish. It is tropical, funky, experimental, and fun, without becoming heavy or boozy.
