BEANOGRAPHY

In The Sun is all radiance. It is fruit-driven, saturated, and joyful — a coffee that does not so much arrive as burst open. The sweetness is immediate, the body is lush, and the finish hums with that strange, delightful edge where ripe fruit starts to feel like candy.

This lot comes from the Rwenzori region of Uganda, known as the Mountains of the Moon, and is built from the work of smallholder farmers, many connected to the Bukonzo Farmers Group, who deliver ripe cherries to Kisinga Station. There the coffee is dried slowly over the course of 21 to 35 days before being moved onward for milling and export. That kind of patient drying takes attention, space, and discipline. It is never just a stylistic choice; it is labour.

What emerges is a coffee with density and playfulness at once. Fig and maraschino cherry move through the cup with a kind of syrupy momentum, while a cotton-candy finish keeps the whole thing lifted and bright. In The Sun feels expansive. It tastes like a landscape with altitude, weather, and time folded into it.

PROCESSING METHOD

Natural

Drying the coffee as an intact cherry alters the seed’s surrounding biochemical environment, influencing fermentation behaviour, drying kinetics, and the preservation or modification of precursor compounds. During roasting, those precursors are transformed through Maillard chemistry and related thermal reactions, helping generate the volatile and non-volatile compounds that shape the cup’s fruit intensity, body, and sweetness.
