BEANOGRAPHY
Possibly Maybe is the coffee in the lineup that refuses to behave too neatly. It is surprising without being chaotic, sweet without becoming simple, and strange enough to stay interesting long after the first sip.
This lot comes from fifteen smallholder farms near Letefoho in Ermera, Timor-Leste, a place where coffee is not marginal to life but central to it. Nearly a quarter of the country’s people are connected to coffee production, and because of its mountainous terrain and relative isolation, the country has become home to one of coffee’s most curious inheritances: the Timor Hybrid, a naturally propagated crossing of local Robusta and Typica that traces back to the early twentieth century. That lineage gives the coffee its own particular logic — familiar in some ways, and unmistakably singular in others.
The cup wears that complexity well. Strawberry comes first, bright and fresh, followed by a blondie-like warmth that feels buttery, vanilla-rich, and almost confectionary. Beneath it all sits a cranberry note that gives the sweetness contour. Possibly Maybe does not present itself as tidy perfection. Its beauty is more human than that. It surprises, lingers, and keeps changing shape as it cools.

Drying the coffee as an intact cherry alters the seed’s surrounding biochemical environment, influencing fermentation behaviour, drying kinetics, and the preservation or modification of precursor compounds. During roasting, those precursors are transformed through Maillard chemistry and related thermal reactions, helping generate the volatile and non-volatile compounds that shape the cup’s fruit intensity, body, and sweetness.
