In the Lam Dong Province, the Dung K'No commune, a cooperative of around 180 farms, cultivates a diverse range of crops, including coffee! Although Vietnam is the world's second-largest coffee exporter, the majority of its coffee production is not the Arabica Species we are most familiar with. However, this cooperative is an exception, transporting fresh arabica cherries to the Duc Trong Mill for Processing. This Catimor Variety undergoes a unique processing method, involving 72 hours of fermentation in sealed tanks, followed by controlled drying, on raised beds.
