ORIGIN STORY: For many years, Sochiapam gained recognition for producing coffee in large quantities rather than focusing on its quality. Recognizing its potential, Red Fox Coffee Merchants began collaborating directly with local farmers to promote selective harvesting instead of strip picking, implement controlled fermentation processes, build drying facilities to replace traditional patios, and introduce rust-resistant hybrid varieties aimed at enhancing the flavor profile of the coffee. 

THE FLAVOURS: For over two hundred years, consumers have predominantly enjoyed bitter dark roasts, a tradition that should not be overlooked. Although Shady Lane does not fall into the dark roast category, it represents a new innovative roasting method designed to achieve mild acidity. This particular community lot from San Pedro Sochiapam features dominant notes of chocolate, cooked almond, and cherry.
